In January 2011 the EU Commission adopted a recommendation to investigate the
published acrylamide levels in food, which the German
acrylamide signal values determine comparable values. This
EU guidelines apply instead of the German signal values and only for
gingerbread, potato pancakes and coffee substitutes were no existing EU
values, so that the German first signal values for these commodity groups
continue, remain valid. A comprehensive overview
of acrylamide and the currently valid signal and reference values were collected in a
flyer.
